How to cook Spaghetti Squash:
- Spaghetti Squash
- Salt
- Pepper
- Extra Virgin Olive Oil
I was introduced to this squash recently, and I’m kind of obsessed with it. It can literally be a replacement of spaghetti. I’ve made it with pesto, tomato sauce, sun dried tomatoes… I’ve even made fritters with it (recipe to come soon).
Pre heat oven to 350 degrees.
Wash squash. Cut in half and scoop out the seeds from the middle (discard the seeds).
Season all over with salt and freshly cracked black pepper. Drizzle a good amount of olive oil all over.
In a baking tray/sheet, place the squash halves facing down. Pop into the oven and bake for 35 minutes (depending on the size of the squash. The bigger the squash, the more time you’ll need to bake). Mine was on the smaller side.
After about 35 minutes flip over the halves, and cook for another 10 minutes.
You want to cook the spaghetti squash till you can easily stick a fork into the squash, not threw the skin. Also if you try scrapping at the squash, if strips are easily made, it’s done.
Take out of the oven and let cool for a little bit.
Once cooled, take a fork and scrape at the squash. Spaghetti like textures will start to develop. Scrape at the squash until all the “meat” of the squash is scooped out. Discard the skins of the squash, and place your spaghetti squash into a bowl. Now do whatever the fuck you want with it!

I added tomato sauce and fat free feta cheese. Delicious!
I love it with sausage/spinach/mushroom mixture on top sprinkled with freshly grated Parmesan. Yummy!
